Mushroom soup recipe (improved!)

 Mushroom Soup Recipe 2 (for 2-3 bowl)
200gram mushroom (wash and cut to slices)
2 onion (chop to pcs)
2 clove garlic (chop to pcs)
4 bay leaf - cut to small pcs
1 long coriander (optional)  - cut small pcs
4 tablespoon milk
500gram chicken stock
1 tablespoon flour

some oil

Seasoning
salt
blackpepper
Mushroom seasoning (optional)


steps:
1. In a frying pan put the oil and saute the onion and garlic for few minutes till soften.
2. Put in the mushroom and saute. some liquid will come out from the mushroom. Cook for few minutes till slightly soften and mushy.
3. Spread the flour over the mixture and toss it a bit for even coating.
4. Transfer the mixture + chicken stock + bay leaf + long coriander into a pot and cook. While cooking I prepare the garlic paste for the garlic bread.. I cook for roughly half hour. By then the soup has thicken. the mushroom mushy in chunks.
5. Off the fire, remove and blend with hand blender.
6. Back to the fire and add in milk + seasoning to taste.

Banana Yogurt Ice Cream Recipe

Currently I am in the process of making Banana Yogurt Ice Cream. If it is successful, to me it will be a fine substitute from using whip cream for fruit type of ice cream. Off course the taste may be slightly different.

So far the taste test tasted yummy! Now the mixture is in my fridge to cool overnight and to use ice cream machine tomorrow for the outcome

2 Banana (choose those really ripe one to get the maximum sweetness)
300gram yogurt
100gram brown sugar

Chinese Red Bean Bun

3 cup flour
1 cup water
1/2 yeast

1st rise - 40min to 1 hour
Then divide dough to 2 then divide into 16 balls
Put the red bean paste in (I use a ice cream scope -small size)
Then let it stand/2nd rise for about 30-40min. It will be slightly bigger.

Steam for 12 minutes. Off fire and let it be in steamer for 5 minutes else will be hard

Recipe of red bean
1 cup of red bean (soak 8 hours or overnight)
Water enough to cover plus 1-2 inch extra
2/3 cup of sugar to taste

I use the rice cooker to cook the red bean. It took about 2 hours. 1st hour I use the porridge function. 2nd hour I use the rice function. When using rice function, the water will eventually evaporate.
Once the red bean soften and water evaporate, I mash it with a potato masher, add the sugar and cook the red bean paste in a pot. The sugar will make the paste wet, thus cook to the consistency of your liking

Making Putu Piring

I tried making putu piring as I have good quality gula melaka from my trip there. I also has a delicious putu piring in Melaka that is rice with gula melaka.

This inspire me to find out how to make my own putu piring. The outcome is that at the 1st few bites, its delicious, cause I stuff it with a lot of gula melaka. However I lack certain basic utensils like small bowl and cloth. Thus my putu piring is a bit dry. I will definitely try this again when I have all the utensils.

Putu Piring
(Makes about 15 pieces)

Ingredients
250g rice flour (I prefer the Thai's Erawan brand)
4 pieces of pandan leaves, cut into 4-inch section
160ml - 180ml hot water
1/4 tsp salt

For the Filling
150g of grated palm sugar

For the Topping
100g of grated coconut
2 pandan leaves, cut into 4-inch section
A pinch of salt

15 (3x3) banana leaves squares

I have always wanted to make this since I saw this in the anime Yakitate Rice Cooker Bread! It takes some times to make it but once its done, I gain the deep sense of satisfaction. My bread is gone in the same day between 2 people. Its so yummy and great fun. There is something magical about the bread making - my favorite part is to see the bread rise. Due to this magic moment, it inspire me to make more types of bread in the future!

Recipe and steps
A)
5 grams yeast (about 1.25 teaspoon)
1/4 cup water - water has to be at 110 - 120Fahrenheit

B)
350 grams flour (2.5 cups)
21 grams sugar (about 1.5 tbsp)
6.5 grams salt (about 1.5 tsp)
21 grams butter (about 1.5 tbsp)
30ml milk (1 oz.)
180 ml water (6 oz.)

About 5 hours

Mix A and leave it to stand for 10 minutes

Prepare B in a bowl. Once done add in A.
Knead the dough for about 8-10 minutes. If its too wet, you can add flour to the work surface.
Add butter to dough mixture till its fully absorb.

Allow to sit for an hour - Leave the dough at warm area or warm setting.
After 1 hour it will look like the 3rd picture on top. Dont punch the dough. Instead lift the dough up at about 50cm height and throw into your bowl with a certain force until it become like its original rise.
Allow to sit for another 1 hour. This is the second and final rise.
It will puff up and double in size.

Baking in the rice cooker
Every rice cooker is different
Mine is the normal rice cooker with porridge and rice function.
After 1 hour, the bottom look slightly burn but still edible. Flip the bread over and continue baking. Its suppose to take another hour but may be shorter depending on your machine. Mine is about 30-40 minutes on the other side.

My rice cooker will switch from cook to warm by itself. I have to monitor it closely. Every time it switch to warm, I had to press the cook function. Sometimes it allowed me to switch mode, sometimes it doesn't. Nevertheless, the bread was cook at the end. Thus next time when I make this again, I will flip the bread at 50minutes to prevent the burning.

Simple Overnight Oats (No cooking required)

Simple Overnight Oats Recipe

I like making this cause it is so simple, able to make in advance and involve no cooking. Best of all its healthy, versatile and you can make any type of combo you wanted! You can make it with basic ingredients or add all sort of toppings, nuts, healthy oil or dried fruit.

You just need to bear in mind the ratio.
1 cup of oats
1 cup of milk
1 cup of yogurt
Add honey to taste (optional)

Variation that you can add:
Fruits of your choice
Nuts
Flaxseed oil
Dried Fruit like dried apricot, raisin, cranberry

Just mix everything, store in a container of your choice and you can eat it the next day. This doesnt require cooking as the oats will soak up the liquid. I prefer to use Roll Oats. The honey is for those who fear the sourness in the yogurt. I notice that there are people who hate eating yogurt due to the sourness.


Thus far I have not store this more than a day as it wont stay in my fridge for long! This is a great way to start your day as it will be very filling and useful as a quick breakfast takeaway during work days. I store my overnight oats in those old glass jam containers when on the go.

I plan to make more of the home made yogurt on my own to avoid the store bought ones. I highly recommend making this.

Ice cream cone recipe

Home made cone, home made green tea ice cream and red bean

Simple Ice Cream Cone Recipe
I made this to complement with my home made ice cream. An ice cream cone machine is required for the cone making. I am not sure the outcome if you use oven to bake. This recipe will make a thick type of cone. You can shape it into a cone or shape it in a bowl when the cone is hot. It is best to use gloves when handling the cone directly as it can be very hot.

60gram sugar
60gram tepung gandum/wheat flour
2 egg
2 tablespoon corn oil

Mix all the ingredient together and pour into machine according to manufacturer instruction.

The cone is crispy and crunchy. I will make it again. I will also experiment by either putting more oil to water it down or add water or milk to see the difference in the future.

Avocado, Mango, Banana Fruit Juice

This is a great combo. And the main flavor is coming from the Avocado. I only started avocado recently and wasn't sure how to use or choose avocado. I once use unrip avocado and the skin is really hard to peel and unrip avocado tasted bitter.

How to - Avocado
Use avocado when they are ripe. Green colour skin is not ripe. Those ripe avocado are the brownish green colour type. It almost look "rotten" as the skin will be brownish with wrinkly skin.

Buying Avocado
If you want to buy avocado and use immediately, dont buy those bright/pretty green colour. Buy those that are brownish or brownish green and ugly. Press it and if it is a bit soft then it is good. If it is hard then means it is not ripe yet. Shake it and make sure there is no sound coming from the seed. If the seed come out, it means that avocado is over rip.

If you bought a green and unrip avocado, you can just leave it outside at room temperature till it turn brownish colour. Once the colour turn to your satisfaction, press it and if it is a bit soft then it is ready to eat. If you are not going to eat it immediately, store in the fridge as it will stop browning. Consume within days.

Recipe
A)
1 ripe Avocado
1 mango
1 banana

B) Low fat milk - eyeball to the consistency that you wanted

C)Ice cream - optional

Steps
Blend A finely. It will look like a thick paste, you may add the milk to the consistency that you wanted. You may add ice cream for the extra richness and flavor. If you want healthier option, then omit the ice cream.

Strawberry Passion Fruit Ice Cream Recipe

These days I have been engross with making Fruit Juice and making home made ice cream. It is interesting to combine certain combination of fruits to create interesting flavors.

I use Barmix mixer to blend all my fruits. I really love this mixer as it is easy to use and there is minimal cleaning. I like the outcome of it as it really blend well.

To give my strawberry ice cream the extra kick, I decide to add in a Passion Fruit.

Below are the steps. It is a super easy recipe. Almost like making fruit juice with addition of whip cream. The lime is usually use in fruit type of ice cream as it will maintain the "freshness" of the fruits. You will need an ice cream maker to churn the ice cream. If you do not have any passion fruit, you may omit it.

Strawberry Passion Fruit Ice Cream Recipe
A)
200g Strawberries - clean and hulled
1 orange - peel the skin and cut to smaller pcs
1 lime - squeeze it to get the juice
1 passion fruit
80g sugar - or to taste
225ml whole milk

B) Whipping cream - no need whip. just pour into mixture.

- Blend A) really well. Then add in B). Chill it preferably overnight or few hours in freezer before put into the ice cream maker.
