Having fun baking cupcake~ this both is one of my earlier attempt in making cupcake~ as time constraint the chocolate cup cake which should be covered by chocolate cream, ended up i use vanilla butter cream instead~ feed back was very good but i find that vanilla suit well for vanilla cupcake and chocolate cream suit for chocolate cup cake~

Making Japanese Cheesecake!

I made Japanese Cheesecake today~! Its so fun and the outcome is good! I took the recipe and tips from The little Teochew website. Click here for the tips and full recipes of this cake. The cheese flavor came out light, fluffy and slightly moist. This cake has a slightly heavy egg taste. However due to the light cheese flavor I quickly swop up 3 slices of cake! My parents love it too. They prefer this cake compare with the heavier flavor cheesecake with biscuit base. When the cake is down, after waiting for half an hour for it to cool, i couldnt wait anymore as the smell of the cake is so tantalizing! Such a yummy and delicious treat!

Making my mum's Kacang Cake!

Finally after almost 27 years, I am making my mummy's kacang cake for the first time. Learn from her once last year and i am happy that i got the chance to make this cake for my friend's bday. Before settling on baking this cake I was helplessly bouncing off ideas in my head on what type of cake to make for her.

You couldnt find cake like this at bakery shop and even if you did they might not taste the same cause it take some work to roast the peanut nicely.

The cake came out beautifully with minor defects. Somehow this cake will sink a little in the middle. I make two of this cake. One is round shape and the other is square shape!

I am so excited! Since small i always pester my mum to make this cake. And when my pestering finally work, my mum always bake this cake for our birthday occasion. Now that i know how to make, I told her that i will be making this cake for her bday and everyone's bday instead! She smile, seem please, took one bite and said that i bake the cake better than hers! Yippy~!

Making Chocolate Cake

This is the Chocolate cake that I have learn from Aunty Marie. Tried it with her once and now I tried i again on my own. Outlook wise is beautiful and I think i manage to absorb most of her methods.

For a moment i struggle to decide whether i should start cutting the round cake or square cake. They look so adorable that I had a hard time deciding. My stomach start growling while taking photo and finally decided to take a knife and reach to the nearest cake and cut it.....and the rest is history as I munch down on a delicious choco cake!! Mmmnnn... I am in heaven~~

Chocolate overdose week!

This week I really went all out and have been making cake since Wednesday till Monday! So scary when I see the list that I have made

1. Wednesday - All-Chocolate Boston Cream Pie - This project failed. In the end just ate as normal chocolate cake. It failed because my pan was too big so I didn’t manage to put the cream. My parents love them though and finish eating all of them. (Hershey website photo)
2. Thursday/Friday - Tuxedo Torte. Took me 2 days to complete during my work day!

3. Saturday - Chocolate Sour Cream Cake (Hershey website photo). For my fren's sweetheart~!

Making Blackberry Cheesecake for my sis bday!

My sis bday cake. They look so beautiful~! Hehe my sister say that I make until very “sincere”. Kinda cute of her to say that! Took me 2 days to complete!

Its meaningful to make this for her since she is the one who share cheesecake recipe with me. I remembered I piled her with question which sets her off… lol~!! So when mum suggest i make her a cake for her bday, I immediately choose the cheesecake recipe that she gave me! Felt that in a way things have come to a full circle~ Good memory and reminds me that the first cake i make is from the recipes she shared with me. =)

Bought this packaging from Singapore. It make the cake look like store bought cake~!

Blackberry puree/topping for cheesecake:
Blackberry topping. I use about 200gram of blackberry, about 3 spoon of sugar, 2 spoon of cornstarch, some lemon juice and add some water. I cook the blackberry and add the rest of the ingredient. Begin with small fire and switch to big fire at the end. Let it boil a little. Then sieve the whole mixture to separate the seed. This part need quiet a bit of work.

Next time I would change the steps. I would first blend the blackberry. Sieve it. Can add the sugar, lemon and water while blending or while cooking. Its easier to sieve it first before cooking because the mixture will turn solid and its pretty hard to sieve it as most will get stuck at the sieve. Cornstarch is optional. When the mixture cool, it will become more solid. 200gram is just nice but i may prefer making the topping thicker and can choose to increase it to 300gram blackberry next time.

Rasberry and Chocolate crunchie Ice cream Cheesecake!!


I have Raspberry Chocolate Marble Cheese cake. I also have make Vanilla Raspberry crunchie ice cream~!  Suddenly a light bulb flash in my head. Hey how about combining both? So does that means: Cheese cake + ice cream = Ice cream cake?? 

I drizzle with Raspberry sauce and almond nibs. Ooohh...check out how the Raspberry sauce drizzle to the side... So fun and ate like a little girl!!

Raspberry Chocolate Marble Cheesecake

Taking a quick shot before baking. I had so much fun swirling in the Raspberry and Chocolate sauce~! Maybe I had too much fun and over swirl a little! I make the cheesecake as usual but this round I wanted to make a marble cheesecake. After bouncing some ideas off my head I decide to try with Raspberry and Chocolate sauce~!

Was rather nervous cause the marbelling part is a bit of a gamble as I was creating the jam and not referring to recipes for the proper Raspberry cheesecake marbelling. I use about 100gram of frozen Raspberry and sieve it. This part takes a bit of a work but its worth it. The juice will flow out and left the seeds in the sieve. After that I added about 2 teaspoon of sieve icing sugar into the jam. The chocolate sauce I use regular Hershey Chocolate sauce. When I have finish mixing the cheese cake and dump into the spring-form pan. Just add trails of jam using a spoon then use chopstick to make a pattern. Some video i watch from youtube uses Palette knife. My mum uses a very thin stick to make her own regular marble cake.

Next round maybe I would add more chocolate sauce and may find way to make the chocolate sauce thicker. I also notice that the color is more vibrant before baking. Which means that most of the beautiful internet pics that uses raspberry jam on the marble cake are the unbaked version.

Beautfiul Raspberry Chocolate Marble Cheesecake after baking! Love it that the side looks so beautiful~! Some of my previous attempt the side will shrink and goes out of shape. There is also no cracking on the cake. The combination smell of crust, raspberry and cheese is amazing~!!

Bake Cheese Cake Recipe (with photos)



Bake cheese cake

Had a fun time making my first cake with my mum! Brought some to office and everyone loves it.

Bake cheese cake top with whipped cream and hershey chocolate syrup

Ingredients
For the crust:
* Digestive Biscuit (1 1/3 cups) - I use the flour measurement - 170gram
* Butter-melted (1/3 cup) - I use Anchor New Zealand butter (not in picture) - 75gram
* Sugar (1/4 cup) - I use the icing sugar - 56.25gram

For the filling:
* Cream cheese-softened (16 oz) - I use Tatura cream cheese
* Eggs (3)
* Sweetened condensed milk (300ml)
* Lemon juice (1/4 cup) - About 1 - 2 lemon - 56.25ml/56.25gram

Preparation
For the crust:
You need to combine the butter; sugar and the digestive biscuit crumbs and press this into the bottom of a springfoam pan.
Baked this in preheated oven for 12 minutes at 163 degree C
Take it out and cooled fully (not in fridge) (by fan

For the filling:
Take a large mixer bowl and beat the cream cheese in this until it becomes fluffy. Once done, add the sweetened condensed milk. Beat the mixture till it smoothens. Now, add the eggs and the lemon juice. Mix this together. Pour this combination over the cooled crust.

Time to bake this combination! Bake it for at least 58 minutes at 149 degrees C.
Once done, leave in in oven (off) and open the door ajar.
Leave till oven cooled.

Let it cool down to the room temperature sitting on a wire rack. Can put a big bowl over the cheesecake to slower down the cooling for 1st hour. Subsequent 2 hour cool to room temp.

You need to chill it at least 5 hours before serving. Garnishing can be done as per your desire.

Close up of Tatura Cream Cheese from Cold storage. I bought this as its affordable compare to Philadelphia cream cheese which cost double of Tatura cream cheese. My cheese cake also taste great with this cheese.

FOR THE CRUST:
Before starting on the crust, heat the oven first. I heat it for about 15 minutes.
The crust: Butter, sugar and digestive biscuit. Picture shows how it looks like after mixing all the ingredient. I crush the biscuit using a chopper.

Spread the crust evenly into the pan

Press the crust to the pan

Baked the crust 12 minutes at 168 Celsius. Cool the crust in room tempreture. Dont put in fridge

FOR THE FILLING:
Use hand mixer and beat the cream cheese until it become fluffy

Add the condense milk. Beat it till it smoothens

Add the egg and lemon juice

Pour it over the cooled crust. Bake it for 58min at 149 degree c. Actually for my oven, it took longer than 58min to cook. As the cake is not ready after 58 min. To test whether the cake is completely cook, just use a long stick and poke it in. If there is cake attach to the stick, it means that the cake is not ready. If the stick come out clean, it means the cake is ready.

Once done, leave in in oven (off) and open the door ajar.
Leave till oven cooled. Let it cool down to the room temperature sitting on a wire rack. Can put a big bowl over the cheesecake to slower down the cooling for 1st hour. Subsequent 2 hour cool to room temp.

Since this is my first cheese cake, I made it plain with no garnishing. It taste so creamy and delicious. Once its done, I use a knife to make sure the cake does not stick to the side of the pan. I unlock the pan and cut the cake. The crust does not break into pieces if i cut carefully.
