Strawberry Passion Fruit Ice Cream Recipe

These days I have been engross with making Fruit Juice and making home made ice cream. It is interesting to combine certain combination of fruits to create interesting flavors.

I use Barmix mixer to blend all my fruits. I really love this mixer as it is easy to use and there is minimal cleaning. I like the outcome of it as it really blend well.

To give my strawberry ice cream the extra kick, I decide to add in a Passion Fruit.

Below are the steps. It is a super easy recipe. Almost like making fruit juice with addition of whip cream. The lime is usually use in fruit type of ice cream as it will maintain the "freshness" of the fruits. You will need an ice cream maker to churn the ice cream. If you do not have any passion fruit, you may omit it.

Strawberry Passion Fruit Ice Cream Recipe
A)
200g Strawberries - clean and hulled
1 orange - peel the skin and cut to smaller pcs
1 lime - squeeze it to get the juice
1 passion fruit
80g sugar - or to taste
225ml whole milk

B) Whipping cream - no need whip. just pour into mixture.

- Blend A) really well. Then add in B). Chill it preferably overnight or few hours in freezer before put into the ice cream maker.

How to make yogurt recipe - the easy way!

Making yogurt is so easy and simple that you should try making them yourself. There is a sense of satisfaction and you can adjust the thickness of the yogurt base on individual preference. Plus by making them yourself, you know what you have put in and may skip store bought yogurt with preservative added. You only need 3 ingredients in making yogurt: hot water, milk powder and yogurt starter. As for utensil its best to use thermos to maintain a consistent temperature to enable the yogurt bacteria to germinate.

Its been a long time that i last made my yogurt. Its actually super easy to make yogurt. I am not sure why they make it so complicated at the website when i google them. Maybe because their weather is different which is why they are complicating the process by double boiling and cooking. My mum advice that I must make the yogurt at night to maximize the chance of the yogurt to succeed.

Ingredient
#Yogurt starter
#Milk powder - about 4 tablespoon each cup
#Hot water
#normal size drinking cup (1-2 cups depending on the quantity you wanted to make)
#thermos to maintain a consistent temperature


Steps
-Pour hot water in cup
-Put about 4 big tablespoon of milk powder into each cup. I like putting a lot of milk powder as I like my yogurt to have a thick consistency. You can adjust the number of scoop you put in.
-Once satisfied with the thickness, wait till the milk become warm. You can test by putting your finger in. If too hot then the yogurt starter bacteria will die.
- Put in the yogurt starter when the temperature of the milk is below 120°F(49°C), but don't let the milk cool below 90°F (32°C). 110°F (43°C) is the optimal temperature. 
-Once warm put in about 1 tablespoon of yogurt starter into the milk.
-Pour all the mixture into thermos. Cap it and leave overnight for about 8 hours at room temperature. If you leave the yogurt outside too long, the yogurt may turn sour. Store the yogurt into the fridge once the yogurt is ready.
 1 tablespoon. I add in about 4 scoop.

There might be some liquid pooling in the yogurt. Just pour away the water and consume the yogurt like normal. If you have fruits like strawberry or apple. Cut them into small slices and mix into the yogurt. Yogurt is a "cooling" type of food (according to my mum). If you tend to eat heaty food like curry, you can eat yogurt to balance out your diet. However please eat the yogurt in moderation.

Yogurt are versatile. Other than adding fruits into yogurt, you can make yogurt ice cream, yogurt shake and yogurt drink. I will expand this page if i try anything new with yogurt.
 
 Breakfast Parfait recipe taken from DonnaHay website. At the bottom i grind Post banana cornflakes. Add in a teaspoon of honey before pouring in the yogurt mixture. I mix in some Raspberry, icing sugar into the yogurt. I top it with Raspberry and a teaspoon of honey.

How to make Cadbury Hot Chocolate!

Cadbury Drinking Chocolate and Farmhouse milk

Since the time i went to Australia I have fallen in love with the hot chocolate serve in Qantas airline! I saw the packet they use is from Cadbury. I then bought the Cadbury Drinking Chocolate powder made in Australia and decided to make my own hot chocolate. Sadly no matter what milk i use, i couldnt find one that I drank from the Qantas airplane.

I now use the milk FarmHouse from Australia. My hot chocolate does not taste like the one i drank from the plane but it ended up tasting like the Hot Chocolate from Starbucks!

So if you wanted to make a hot chocolate from Starbucks, just mix the milk and the chocolate powder when boiling.

Recipe for 1 person.
- Boil the pot with 1 cup of milk (size of cup depending on what cup you use)
- Add in 1 to 2 teaspoon of Cadbury Drinking Chocolate powder
- Stir well

Its really simple to prepare the drink!

Chai boh kuih

Ingredient (16 cup of kuih)
Mixture
4 ounce rice flour
1/2 ounce tapioca flour
1 tsp salt
2 cup water [1 hot, 1 pipe water]

Sauce
-tou cheong - 1 normal (dessert) spoon
-cili boh (combination of fresh and dried cili) - 1 normal spoon
-dried prawns or ikan bilis - grind them
-2 garlic
-sugar to taste
-4 table spoon (biggest spoon)

Utensil
Steamer tray, kuali, cover
alluminium cup

Prepare the kuih
-Mix all the ingredient (mixture) above and pour into measuring cup. If the cup are not full then add water.
-Put water in kuali, steamer tray and alluminium cup [wet the cup first]. Heat them up.
-Take bater and pour into cup. After pouring stir the bater with chop stick cos the floor will sink to the bottom.
-Steam for 20 min. If got water left on the kuih then pour the water away.

Prepare the sauce
-A bit of oil
-Fry garlic, cili, ikan bilis/prawn, chai boh
-Tao chiong and sugar
-add water if dry
-taste. If not sweet then add sugar

Drinks: Bobo Caca (Steam and boil)

Ingredient

Yam - inside grey colour
Sweet potato (Ubi Kayu)- inside purple/orange/yellowish colour
Santan
Pandan leaf
Sago

Prepare the Yam and Sweet potato:

-Cut the yam and sweet potato into tiny cube
-Steam both for 10 minute

Prepare sago:

-Bowl some water and pour water into sago (we are not boiling the sago. just heating it with hot water)
-Leave it for 10 minute
-Sieve the sago
-Wash the sago with pipe water while the sago is in the sieve (to remove starch)

Boil them:
-Fill pot with water and boil it
-Add the sago and pandan leaf for 5 min
-Add the yam and sweet potato
-Serve after the pot boil

Drinks: Barli drink

Ingredient
- 1 cup of barli- 4 pandan leaf. wash the pandan leaf and tie in a knot

steps
- Put barli in pot. Pot is one and half size of a hand.
- wash the barli 3 - 4 times
- put water and pandan leaf inside
- at first boil using big fire then turn the fire small when the water is boiling.
- Boil till the bean gets bigger (note: the bean should be bigger then the photo). boil for about 15-20 min.
- then ready to drink

Kuih: Malacca/Melaka Kuih

Ingredient
5 pandan leaves - to create about 3/4 cup of pandan juice
6 ounch of Glutinous rice floor
1 bowl of gula melaka
2 teaspoon of brown/white sugar - to taste
1 1/4 of grated coconut (when shop for it can buy in half amount. so buy 1 1/2)

Pre-making the dough
- Wash, cut the pandan leaves into 5 cm and blend it (like fruit juice)

Making the dough
- Mix the flour with pandan juice. Create a well in the centre then pour the juice slowly in. Dont pour the whole cup in one shot. Pour a bit then mix then pour a bit then mix till forming a dough.

-Knead the dough till its soft/put in fridge for few hours if u are not going to eat it immediately. If put in fridge, take it out then mix with about 1 or 2 spoon of water.
-Cut the gula melaka in downward motion and chop to tiny pcs. Mix with brown sugar or white sugar.

-Take about 1 tsp/bigger dough then roll into a ball.
-Flatten the ball to put the gula mlk filling inside. Tip: when flatten the ball, must flatten in such a way that the bottom part is thick and the side are thin. else the ball will break. Try to place the dough on ur finger instead of ur palm and create a shape like a cup. Fill too much the ball will break and too little then wont be tat tasty. The ball will be sticky after that so try to dump the ball into a pot of water to cook/put the flour on the plate before u place the ball again.

Cook
-Fill a pot of water and make it boil. Dump the ball inside. When it float wait for a few minute before taking it out.

-Use a flat sieve to take out the ball and place it on the coconut (first we must steam the coconut so that the kuih will be more lasting)

-Place the kuih on plate and ready to serve~~@@!!

Recipe: Yam Cake (Fry and steam)

Ingredient

-Yam
-Small Onion: 10pcs
-Dry prawn
-Big cili
-spring onion
-Flour: 2 cup rice flour, 1 cup sago, 1 ts spice powder

Pre-prepare Yam

- Wash yam throughly before removing the skin. After cutting cannot wash it (cos it will make the hand itchy if contact with water). If the yam/knife is dirty then wipe with cloth after cutting it.
-Then grid the yam into tiny pcs. if the last one cannot gride then cut into pcs

Small Onion
-Cut into small pcs

Prawn
-Wash and soak the prawn for 15 min (dont throw away the water that are use to soak the prawn)
-Cut into tiny pcs

Flour

-Mix together: 2 cup rice flour, 1 cup sago flour, 1ts salt, 1ts 5 spice powder (buy in medicine shop), 4 cup water (same cup when take flour).

Red cili and spring onion
-Cut it as topping at the end

Prepare the steaming utensil before frying
-Oil the tray a little so that the mixture wont stick so much on the tray
-Steam the tray for 5 min

Frying: add oil in kuali
-Fry the small onion then take it out
-Fry the dry prawn then take out half
-Add in the yam and some small onion - fry 5 min
-Add in the flour mixture + the water from soaking the prawn

-Fry till the mixture look thick

Steam
-Pour the mixture from kuali to steaming tray for 40 min

After 40 min
-add in toppings: chop red cili, spring onion, fried onion, fried prawn
