Banana Yogurt Ice Cream Recipe

Currently I am in the process of making Banana Yogurt Ice Cream. If it is successful, to me it will be a fine substitute from using whip cream for fruit type of ice cream. Off course the taste may be slightly different.

So far the taste test tasted yummy! Now the mixture is in my fridge to cool overnight and to use ice cream machine tomorrow for the outcome

2 Banana (choose those really ripe one to get the maximum sweetness)
300gram yogurt
100gram brown sugar

Ice cream cone recipe

Home made cone, home made green tea ice cream and red bean

Simple Ice Cream Cone Recipe
I made this to complement with my home made ice cream. An ice cream cone machine is required for the cone making. I am not sure the outcome if you use oven to bake. This recipe will make a thick type of cone. You can shape it into a cone or shape it in a bowl when the cone is hot. It is best to use gloves when handling the cone directly as it can be very hot.

60gram sugar
60gram tepung gandum/wheat flour
2 egg
2 tablespoon corn oil

Mix all the ingredient together and pour into machine according to manufacturer instruction.

The cone is crispy and crunchy. I will make it again. I will also experiment by either putting more oil to water it down or add water or milk to see the difference in the future.

Strawberry Passion Fruit Ice Cream Recipe

These days I have been engross with making Fruit Juice and making home made ice cream. It is interesting to combine certain combination of fruits to create interesting flavors.

I use Barmix mixer to blend all my fruits. I really love this mixer as it is easy to use and there is minimal cleaning. I like the outcome of it as it really blend well.

To give my strawberry ice cream the extra kick, I decide to add in a Passion Fruit.

Below are the steps. It is a super easy recipe. Almost like making fruit juice with addition of whip cream. The lime is usually use in fruit type of ice cream as it will maintain the "freshness" of the fruits. You will need an ice cream maker to churn the ice cream. If you do not have any passion fruit, you may omit it.

Strawberry Passion Fruit Ice Cream Recipe
A)
200g Strawberries - clean and hulled
1 orange - peel the skin and cut to smaller pcs
1 lime - squeeze it to get the juice
1 passion fruit
80g sugar - or to taste
225ml whole milk

B) Whipping cream - no need whip. just pour into mixture.

- Blend A) really well. Then add in B). Chill it preferably overnight or few hours in freezer before put into the ice cream maker.

Black sesame Ice cream recipe~

I find that my basic vanilla ice cream recipe that i took from my ice cream maker manual has a few variations. Previous i tried to add in crush cookies and i get cookies and cream ice cream. This time i decided to add in black sesame seed and it still work deliciously~!

Recipe:
Vanilla ice cream (french style)
A)
2 egg yolks
1 egg
125g caster sugar
5g vanilla sugar
5g corn flour 

B)
400ml milk
2 tbsp black sesame seed (crush or pounded into powder)

C)
150ml whipping cream
-Put A) together in a bowl. Beat with the mixer until egg yolks are almost white.
-Gently heat B). After a while you will get the fragrant smell of the black sesame seed. Add half of B) into the egg yolks and beat it with a whisk. Then pour mixture back into pot and use moderate heat to cook the custard. Dont boil as it will curdle. Stop when the custard thickens or coat the back of your spoon. You can use sieve to make sure that there is no egg curdling.
-Take out, let the mixture cool, cover with baking paper and store in fridge. Once its chilled, add the whip cream and stir till everything is mix.
-Pour into ice cream machine.


1. Replace the vanilla sugar with caster sugar then use vanilla bean or essence. Otherwise make your own Vanilla sugar. Its easy by combining vanilla bean and caster sugar. Click here --- How to make vanilla sugar?
2. Black sesame seed. Roast it in a non stick pan for few minutes. Put into a small blender and blitz it till become powder.

Cookies and cream ice cream recipe~!


Its a sunny sunday and it feels so good to chill and relax with home made cookies and cream ice cream. Since i am using Oreo cookies, you can also call this Oreo ice cream.

I got the recipe from my Philip machine recipe book by combining vanilla ice cream with crush oreo cookies. It is a french style vanilla ice cream whereby you have to cook the egg into custard and required chilling. Off course there is also the "instant type" of vanilla ice cream that doesn't require cooking. I find that the flavor in french style is more pronounce and mix well with cookies and cream. Below measurement is for my Philip ice cream maker. If your ice cream machine has bigger capacity, feel free to increase the amount.

If you dont have vanilla sugar, you can replace with caster sugar and use vanilla bean/normal vanilla essence. For me i use vanilla sugar as i have made it in the pass. It is really easy to make. Click on the link on --- How to make your own vanilla sugar?

Recipe:
Vanilla ice cream (french style)
A)

6 pcs of Oreo cookies

-Put A) together in a bowl. Beat with the mixer until egg yolks are almost white.

-Take out, let the mixture cool, cover with baking paper and store in fridge. Once its chilled, stir in C)
-Pour into ice cream machine.

To make it into cookies and cream ice cream, crush D). Bag the oreo in a plastic bag and thwack it with a rolling pin till its finely crush. When the ice cream is almost ready, slowly add in the crush oreo biscuit and mix for 5 minutes.

Making cream cheese ice cream recipe~

After my cream puff project, I have tonnes of extra whip cream. I wanted to make an unusual flavor of ice cream, while flipping through my recipe book, i instantly clap eyes on cream cheese ice cream and decided to make them~ Its so fun making new flavors that i only heard in Baskin Robbins ice cream shop~ If you love cheese then you will love this ice cream but its best to match it off with some crush biscuit as eating it alone may be a tad overwhelming.

Recipe: Cream cheese ice cream
 A)
350g cream cheese
200ml milk

B)
125g caster sugar
15g vanilla sugar
150ml whipping cream

- Whip B) till stiff.
- Combine A).  Beat till there is no more lumps.
- Fold B) into A). Pour into ice cream machine.

Note: 
1. Its best to beat the cheese first then slowly incorporate the milk. I combine both at once and its quiet hard to beat as the cheese is still hard and the milk is liquid. Some of the mixture spill out.

Flower pot ice cream surprise!

Give this as a surprise to your love ones! Be it for Valentine day, Birthday or Mothers day! They will immediately think that you are giving them a flower pot which is not that far from truth. Well it is a flower pot. But we add another interesting element by combining flower pot and oreo ice cream! This project is really simple once you have collected all the necessary materials. The idea is so endearing that it will definitely put a smile on people's face.

Well I was wondering whether i should write this post. If my family and friends read this then this surprise will not work anymore. Well in the end couldnt resist the temptation of sharing this to the world. I took the idea from Food Wishes Chef John. In his site he wrote the source of the idea comes from the thepioneerwoman.com. So you would have a few reference and sample to make your own pot of surprises. I skip the part of putting a pound cake into the pot.

I watch the video from Chef John's Food Wishes website but never thought that I would really use the idea until I wanted to surprise people on their birthday! In the end I adapt and change the steps to make this surprise pot.

Tools:
-Pot
-Aluminium foil
-A few chopstick depending on how many flowers you use. Cover it with aluminum foil
-2-3 daisy flower. Cover the stalk with aluminum foil to prevent it in contact with the ice cream.
-Crush about 75g of Oreo cookies with the cream remove

Steps:
Line the pot with aluminum foil. Well I could actually skip the steps for aluminum foil and make the flower pot look even more real. However I find it unappetizing to just stuck the ice cream into the pot as I am not sure whether the pot is meant to be in contact with food directly. So I clean the pot well and line it with aluminum foil before putting in the ice cream.



I choose daisy flower. To me daisy look really colorful and cheerful. As the stalk are too big to fit into a straw, I just stuck a 3-5 chopstick (depending on how many stalk you use) into my ice cream and dump the vanilla ice cream around the chop stick.

Fill up the ice cream almost until the top. Keep some space so that the vanilla ice cream will be covered with Crush Oreo.
Refrigerate till the ice cream sets. I freeze it overnight. Took out the chopstick. There will be a hole at the centre, stick in the daisy and fill up the top with crush oreo cookies. Completely covering it. The Oreo cookies act as "soil" to the flower pot.
I remove the cream and use my chopper to crush the cookies. Faster this way. Otherwise you can just crush it in a bowl or put into a plastic and whack it till its all crush. If you didnt remove the cream then the cookies may not look pure black colour.

How it look like without Chocolate cream covering it. Look beautiful as the color are contrastingly black and white. Strangely sad to cover its beauty with chocolate cream but i thought that ice cream cake wont be complete without being properly decorated with cream.

 I have extra chocolate cake from making Hershey Chocolate Sour Cream Cake. After racking my brain going through a few possibilities of reproduction - Ice cream cake, Hershey Brownie Sundae cheesecake or just dump a dollop of ice cream on the cake. Finally decided on Ice cream cake cos its so easy to make and I have Vanilla ice cream from making another surprise birthday project with ah ma! Once decided, quick as a whip, i search for my 4.5inch round pan with detachable bottom, line it with aluminum foil, cut the cake by pressing the pan on the cake to create a circle line, dump the round cake into the pan bottom, put the ice cream on top completely sealing the top of the pan, covered with aluminum foil and dump into the freezer overnight. I thought of making ice cream cake in the morning. The next minute I know I am done with a beautiful cake covered with aluminum foil sitting in my freezer~!

Vanilla ice cream is store bought. Well I dont have enough time making my own ice cream this time. The chocolate cream comes from CHOCOLATE CREAM FILLING recipe from making chocolate cream puff. I made cream puff with ah ma and there was still plenty extra of cream. So I utilize the cream by covering my ice cream cake.

I am happy how the cake turn out considering i am making this from imagination and not recipe! It helps that I have all the ingredients ready at hand!!

Making Homemade Vanilla Extract and Vanilla Sugar!

 I am so excited making Vanilla extract and Vanilla sugar! KT and Na found the recipe from The Little Teochew and I have anticipate the day that I get all the ingredients, bottle and try them out! My mum always nag when I add in too much artificial Vanilla extract into my dessert. Therefore by creating my own Vanilla Extract I no longer have to rely on artificial Vanilla Extract!


How to make Vanilla sugar
- Just mix the sugar and Vanilla pods

How to make Vanilla extract
-Mix Vodka (35% alcohol) with Vanilla pods (seeds remove). If seeds were not remove will create a mild Vanilla extract. The longer you keep the Vanilla extract the better it will be!

When using the vanilla seeds, just take out from the vanilla sugar. Wash and dry the pods. Split it and remove the seeds. The Vanilla pods can be recycled and dump into the vanilla extract!

 Day 1 of using Vodka + 2 split Vanilla Pods. At first I didnt scrap out the seeds and have to dig them out and split them.

To cook or not to cook whip cream?

When making certain ice cream like vanilla and chocolate ice cream that require egg custard base, they often need to be cook with the milk. I find that by cooking the whip cream (as oppose to putting the whip cream in at the end), the texture of the ice cream is creamier and thicker! So going forward I will always cook the whip cream whenever the required to cook the custard!

How to make apple crumble recipe

I wanted to make the crumbs from the Apple crumble recipe and serve the apple raw with cream. The crumbs is intended for Apple crumble ice cream. I found the recipe at this website with detailed steps by steps. They even include a video for better understanding! I also took the mushroom soup recipe from this website. So far the website has been a pretty reliable source of recipes and tips. As I will be modifiying the steps since i am only making the crumbs. Feel free to visit the original site for the full Apple crumble recipe instruction.

I am only making the crumbs of the Apple crumble recipe and I will be using half of the quantity. Thus the amount, flour and apples have been modified or deleted.

Ingredients        
85 grams Granulated sugar     
85 grams Butter or cooking margarine
140 grams Superfine flour

OPTIONAL INGREDIENTS
1/2 cup rolled oats or Corn Flakes (most breakfast cereals will do)

COOKING EQUIPMENT
1 Medium-sized oven-proof dish
Weighing Scales
Fork

Method
Turn your oven on now so that it's pre-heated ready to cook later on! Heat settings are 180C / 350F / Gas Mark 5.
 
Now, make the 'crumble' mixture. I've tried this with my hands, an electric blender and a fork. I think a fork is best but the experts prefer hands!

Mix the butter / margarine with the flour in a dry bowl using a fork until you have a texture like breadcrumbs. It's not important that every single bit is like breadcrumbs, but try and get most of it like that. This will take about three minutes. If you are adding the optional ingredients of oatmeal or Corn Flakes, do it now. Mix it all in well.

Add 56.67g (not all the 85g) ounces of sugar to the mixture and mix it all together with the fork. This will tend to make the mixture even more like breadcrumbs. That's your crumble mixture made and ready.

Spread the crumble on a baking tray and spread out the remaining sugar. Put this into the middle of your pre-heated oven at 180°C / 350°F / Gas Mark 5 for 20 minutes.
Before baking.

Serve hot or cold with ice cream, cream or custard.

Vanilla Rasberry Crunchie Ice Cream Recipe



I tried making half of the quantity in the recipe. The taste and smell awesome. But the texture is a little on the rich side. Next time I will use my original Vanilla ice cream with the same combo of rasberry and crunchie bar combination (either with or without egg base).

The steps sounds a bit complicating to a newbie but if you break it into 3 main parts then its easier. 1) Make the Vanilla ice cream 2) Crush the Rasberry  3) Chop the crunchie bar. Mix all together when the vanilla ice cream is ready in ice cream maker.

Vanilla Raspberry Crunchie Ice Cream
250g raspberries (1)
2 tablespoon icing sugar
6 large 3gg yolks
75g caster sugar
568g milk
284ml cream (2)
1-2 Vanilla pods split (3)
2 x 40g crunchie bar roughly chop

Notes
1) Video they uses fresh raspberries but i uses frozen ones which is cheaper than fresh raspberries
2) Video uses heavy cream but i replace with whip cream. I don't think there is a difference in the cream since we do not need to beat the cream.
3) How to split Vanilla pods. This video shows how to make Vanilla blackberry ice cream. In the front part it shows how to split the vanilla pods and scrap out the seeds. I followed how he scrap them out. I wanted to save the vanilla pods to make vanilla extract. So i only uses the seeds in this recipe. When you see black spot on the ice cream - thats the vanilla seeds. If you do not have vanilla pods then can replace with vanilla extract.

Steps
1. Place 150g raspberries in a sieve. Press them through with the back of a spoon. Discarding the seeds. Sweeten with icing sugar and add more to taste if necessary.
2. Heat the milk, cream, vanilla pods until nearly boiling point.
3. Place egg yolks and sugar in a bowl. Mix to combine. Pour the milk mixture into egg while stirring continuously.
4. Sieve the custard and discard vanilla pods (if uses the pods. Otherwise can skip this step) into the pot. Medium heat. Warm gently while stirring continuously for about 10 minutes until thicken and coat the back of the spoon. Strain custard (means sieve) into a clean bowl and cover with bruise proof paper (or baking sheet) to prevent skim from forming. Let it cook.
5. Once cool put into freezer for 2 hours and into ice cream maker.
6. When ice cream almost done. Pour in the raspberries juice, raspberries fruit and chop crunchie bar.

Vanilla Ice cream recipe (cook custard base)

I took this recipe from my Phillip ice cream maker manual. It has egg base and it is creamy and delicious. I will be heating the egg and you will need to cool the mixture into room temperature in addition to putting it into fridge to chill. I will usually take my time and spend about a day for it to cool and chill. It takes time to make this recipe but the taste at the end is worth waiting for.

Vanilla ice cream is very versatile. You can mix and match with various types of ice cream. You can mix it with chocolate ice cream, top the ice cream with crush Oreo cookies, drizzle with caramel sauce, strawberry, chocolate and raspberry sauce. Or you can eat it with apple crumble. The combination is endless. Which is why I love making Vanilla ice cream to go with various other combination.

 I tried tweaking the recipe on my own. Initially I do not have Vanilla sugar so i replace with less than half a teaspoon of Vanilla essence. Once i bought the Vanilla pods, scrap out the seeds and then I heat the milk, cream and vanilla seeds together. The smell of using real vanilla is amazing and could not beat the artificially made Vanilla essence. I will write a separate post about the Vanilla pods and what I do with them. Another modification that I did is to heat the milk and cream together. Interestingly I find that the ice cream is thicker this way. Once I finish heating the egg mixture at the end and waiting for mixture to cool. I cover the surface with a baking sheet to prevent skim forming. Usually the egg will continue to cook and thus the texture becomes thicker.

Original recipe from the Philips ice cream maker instruction manual.
Ingredients
2 egg yolks
1 egg
125g caster sugar
5g vanilla sugar (or use less than half teaspoon of vanilla essence)
400ml whole milk
150ml whipping cream (no need beat)
5g corn flour

Instruction
Put egg yolks, caster sugar, vanilla sugar and corn flour into a bowl, Beat with the mixer until the egg yolks are almost white.

Gently heat the milk. Add the heated milk gradually to the egg mixture, while beating with the mixer. When the ingredients are thoroughly mixed, pour the mixture into a pan.

Heat the mixture over moderate heat for 1-2 minutes, while stirring constantly. Make sure the mixture does not boil. If the mixture curdles, mix the ingredients for half a minute with the mixer or in a blender or food processor.

*For me i just pour the mixture into the sieve to remove any small bits of curdling. Cover the surface with baking sheet.


After peeling off the baking sheet and before putting the mixture into the ice cream maker. The black spots are the vanilla seeds. The smell itself is amazing!


Let the mixture cool to refrigerator temperature. Then gently fold the cream through the mixture. Switch on the ice cream maker and pour the mixture into the cooling bowl.

Chocolate Ice cream recipe (cook custard base)

 Chocolate ice cream. I name it Strawberry Chocolate Sunrise

Ingredients
15g cocoa powder - I use HERSHEY'S Cocoa
110 gram of icing sugar
1 egg
2 egg yolk
1 pinch of salt

300ml milk (I use fresh milk. Most recipe recommend Full Cream milk/whole milk)

200ml Whipping cream

1 baking sheet to cover chocolate custard surface

Preparing the Chocolate Custard
Put egg in a bowl and sieve in the icing sugar. Beat the egg till its almost white. Carefully pour in the cocoa powder. Mix it carefully with a spoon (watch out the cocoa powder is light and will spill). Beat the whole mixture till well mix. I usually beat the mixture till its a shade lighter due to the egg. Add in salt.

Heat up 300 milk in small fire. Dont bowl or simmer. Bubble start forming when its done

Pour the milk slowly into the chocolate mixture. Can choose to pour half or almost all in. While stirring the mixture, move the pot back to the stove.

Pour the mixture back into the pot.

Use low heat and continuously stir the mixture. When mixture is ready pour into a sieve to remove any egg curdle.

Tip: How to control the fire when cooking the egg custard? I cook it for about 4-6 minutes. Some recipe recommend 3 mins. Use a wooden spatula. Stir continuously while cooking. I control the fire by switching it on in low heat for a minute. Switch if off for 1 min. Switch it on for about 1 minute and switch it off again. I stir particularly vigorously at the end.

Tip: How do I know the Chocolate custard is ready? 1) When the custard coat the back of the wooden spoon. 2) Once its getting slightly harder to stir which means the custard is thickening. 3) When it stick to the bottom of your pot. When reach point 2 and 3 stop and switch off the fire.

To prevent skim from forming, cover the custard surface (that means the paper touches the surface of the custard) for about 2 hours. When its completely cool down, remove the baking sheet and pop it into the fridge/chiller overnight.

The next day, whip the cream till its peak. Pour in the chocolate custard into the whipping cream and stir gently until mix. Pop into the freezer this time and chill for 2 hours.
 
After storing for 2 hours in the freezer. Break the icicles by stirring with a spoon.


Break up the icicles and pour into the ice cream machine!
 
 Beautiful looking Chocolate ice cream. I like to churn for about half to 40mins.

Oreo Ice cream cake recipe


 Two days ago while surfing the net for ice cream ideas, i came across a site that sell ice cream cake. The cake look so pretty and delicious. I really wanted to eat the cake. Then it struck me that hey instead of buying the ice cream cake, i can make one myself! Then i started googling and came across Laura Vitale's recipe for Oreo Ice cream cake. The ice cream cake is entirely made of Vanilla ice cream, Caramel + Chocolate syrup and Oreo cookies. This recipe does not have cake base in it. The video look so simple that i wanted to make them immediately! However as its my first attempt, i decided to go small in this project. Instead of using a 9inch springform pan, i went and bought a 4.5inch pan with a detachable bottom. I never really followed the measurement in the website as i modified the base and i find that sauce included in the ice cream should be according to individual taste. I made Vanilla ice cream so I will use up my own vanilla ice cream. You can also can get vanilla ice cream from store.

INGREDIENT
Oreo cookies - 2 packet - About 135gram
Caramel sauce - 1 tablespoon for mixture and 1 teaspoon for topping
Chocolate sauce - 1 tablespoon (I use Hershey chocolate syrup)
Vanilla ice cream - 300gram

MAKING
Before we start line the pan with plastic wrap. So that its easier to take out ice cream once refrigerated.

Making the Base
60g oreo cookies - crush
15 butter - melt
- Mix both together
- Press the mixture into the bottom of the pan
- Freeze for 10min or so to let it harden

Making the Ice cream
- Take out the ice cream and let it sit at room temperature till its soften.
- Crush about  50g oreo cookies for filling/20g for topping

- Pour in the caramel, chocolate and crush Oreo cookies into the Vanilla ice cream. Mix them.
- Line the pan with Oreo cookies
- Pour in the ice cream mixture into the pan. Garnish with crush oreo cookies and caramel sauce
- Cover with plastic and freeze it for about 6 hours

Green Tea Ice cream Recipe!

Ingredients
300 milk ml
90gram brown sugar
5** green teaspoon matcha powder (Using Maruyu  Omacha Powder)
a pinch of salt

150ml whipping cream

** I notice when i use a different brand of Green Tea, 5 teaspoon would be too much. Thus watch the original video or season to taste. In ice cream its a bit difficult to season to taste since you will only know how it taste at the end. Thus you may need to use some trial error.

This green tea ice cream is really easy to make.

Steps:
Just mix the milk, brown sugar and green tea powder. Beat till the sugar dissolve. Add in the salt.1

Put ice in a big bowl and put a smaller bowl in the big bowl. Pour the cream in (the small bowl) and beat the whipping cream till its peak.2

Pour the matcha mixture into the whipping cream and stir gently till its mix. Pop into the freezer for 2 hours and pour it into you ice cream maker!

Tips
1 The green tea powder is really light and will fly off easily. Using a spoon, mix the green tea powder with the milk before you start beating. Else the green tea powder can spill out and the precious green tea powder would be wasted. I have a small blender. I just dump all the ingredient into the blender carefully and start blending. It is easier and get the job done faster!


2 How to see the whipping cream has peak? There will be a cone shape stuck to the beater when you lift up the beater. If the cream doesnt get stuck to the beater means that you have to continue beating. However stop beating once you have seen the cone shape.


Result
I like the taste of the green tea ice cream. The taste is light and creamy. I prefer to eat this ice cream with a cone. When i ate it in a cup i like to sprinkle in grind nuts, wafer and whip cream. Vanilla Ice cream with Oreo cookies recipe

I made Vanilla Ice cream and they taste delicious! Its a Philadelphia style ice cream so there is no eggs involve! After freezing the ice cream for about 2 hours I garnish with crush Oreo biscuit. The taste of Vanilla and Oreo really complement each other. The recipe is taken from Food Wishes by Chef John. You can even find his video of the vanilla ice cream in Youtube.

I change some of the ingredients and steps. I do not have heavy whipping cream and heavy cream. I use the Bridel Whipping Cream.


I have modified the quantities according to the one state in my Philips ice cream maker manual.

Recipe:
-400ml milk. I use FarmHouse fresh milk. Usually when making ice cream they recommend using whole milk.
-150ml whipping cream.
-Quater cup sugar (about 50ml according to cup measurement)
-1 to 2 teaspoon of vanilla flavoring

Steps: In the origianl post from Food Wishes, Chef John heat the milk, sugar and cream together. I wasnt sure about heating the Whipping cream, so i change the steps.

- Pour the milk and sugar into a pot. Heat the mixture till the sugar is melted.
- Chill the milk and sugar. I left the mixture to cool to room temperature and pour in the chilled whipping cream.
- I add in about 1 teaspoon of vanilla flavoring
- I chill overnight. Pour into ice cream maker. After half hour. The ice cream is done.

Mango Ice cream recipe

I just made mango ice cream and its really yummy. I took the recipe from http://hubpages.com/hub/mango-ice-cream

The recipe after trying~

What you need:
2 ripe mangoes. I use medium size mango.After removing the seed, the mango pulp weigh about 330gram
1 orange
1 lime
Quater cup sugar (roughly about 50ml or slightly more)
½ cup cream (whipped)

Procedures:

   1. Peel and slice the mangoes. (throw out the seed in the middle after scraping off the fruit). Depending on the size of the mango your quantity might varies. My mango is about medium in size. After throwing the seed the mango weigh about 330gram.
   2. Juice the orange and lime using a juicer.
   3. Blend the mango using a food processor (or blender) until you make a puree.
   4. Add the orange juice, lime juice and sugar. I belief sugar should be according to taste. Different type of mango has different type of sweetness. What I do is that I pour in the sugar bit by bit, blend and taste the puree. Add more sugar till its adequately sweet.
   5. Pour into a metal or plastic bowl and fold in the cream.
   6. Put in the freezer for about an hour.
   7.  At the end I decided to add in a a small amt of gelatin. About less than half teaspoon. Mix the gelatin in water till dissolve. Pour into the ice cream and mix. Next time will add gelatin before freezing.
  8. The website shows the method by using the freezer and whisk to create ice cream. Since I have a ice cream maker, I just pour the mixture into my Philips ice cream maker. After 30mins the ice cream is done. Actually in less than 20min I can see the results. But i prefer the ice cream to be firmer, so i waited for 30mins.
  9. Put the ice cream into container and freeze.

(The original recipe calls for a cup of sugar. I find that too sweet so i reduce the amt)

Making Strawberry Ice cream (Recipe)

Today I went to cold storage and bought some ingredient for ice cream. As I shop I decided to make strawberry ice cream. Cold storage sell their 250gram strawberry from USA for about RM11-12. I also found there there is frozen fruits like blueberry, strawberry, blackberry and mix berries that sell at around RM30 for 1kg. I bought the blackberry 1kg and will make blackberry ice cream next!

After coming back from home i immediately start my ice cream process. I heard a lot of great comments about the strawberry ice cream in the recipe book or making your own strawberry ice cream in general. That its not to be miss. I waited for about 40mins to churn and out comes great tasting strawberry ice cream!

Ingredients (modified to accommodate the ingredients that i can find)
-200g fresh Strawberries.
-90g caster sugar
-Half lime and half orange juice (or at least 1 tbsp lemon juice)
-To replace whole milk 225ml - I use 110 evaporated milk + 105ml water (usually its half of each milk and water)
-100ml whipping cream

---Puree strawberry/juice/milk/sugar
---Combine strawberry mixture with cream. Make sure all ingredient thoroughly mix
---I pop into the freezer for about 1. Ideally at least 1 half or 2 hours. Stir the mixture.
---Switch on the ice cream maker and pour mixture into the cooling bowl (scrap away any ice stuck on the cooling disk before start)
After freezing for about 10hours
