Dry Mee with poach egg recipe experiment!

I wanted to make dry mee version from those mee stalls. I couldn't really find a recipe so I decided to experiment on my own! I came back from work and I was famish. With a picture of how my mee should be like. I proceed to make poach egg, chop some spring onion, blanch taugeh and red pepper. I also add in a type of fragrant leaf from my mum's garden for added flavour.

As for the dry mee sauce, I played around with sesame oil, light and dark soya sauce, pepper, a bit of salt and sugar. And voila~! My dry mee with poach egg is ready! As I was really hungry I practically slurp the whole mee down! Ooishi!

This experiment is great! Cause it is easy to make and I do not have to rely on instant noodle seasoning! Plus some dry mee sold in stalls has added tonnes of oil in them. This has definitely become a healthier choice! Go try experiment on your own!

Dried Mee with mince meat sauce recipe

I adapt the recipe from babeinthecitykl. Some of the steps below are copied from her post. The dried mee came out beautifully delicious! I also add in some other ingredients like Poach eggs, mushroom, spring onion and add fish sauce into the mince meat.

I have wanted to make those dry mee version that the stall sell. I have wondered what sauce they put into the dry mee. Every stall seems to have their own version. At first I tried concocting my own version when I couldn't find one online. I tried a few variations. After googling how to prepare the mince meat on dry mee, I came across this blog that gave instruction on how to prepare mince meat on dry mee! Her steps are very easy to understand and I had all the ingredient at hand!

I followed her instruction and added new ingredients of my own. After checking my freezer I realize that I have run out of mince meat. So I defrost some chicken breast meat and mince them in food processor once remove the bone. The portion enough to be eaten by 3 ppl.

I marinate them with light soya sauce, fish sauce, sesame oil, pepper and cornstarch (watch out as light soya sauce and fish sauce are salty and fish sauce is optional). Marinate for 15 minutes. As for other ingredients I chop 1 onion, 3 cloves garlic, wash and soak dry mushroom in water till soft, wash some vege and poach an egg.

-Sauté the onion in oil till translucent.
-Dump the garlic in and fry till fragrant. (Both ingredients above may burn easily so watch out)
-Add mince meat and fry till brown before stirring and flipping to brown the other side. At this point I will shred the meat into small pieces.
-Pour in some oyster sauce and some thick soya sauce (for color). Oyster sauce is already salty so it is not necessary to add salt.
-Stir and pour in some water (depending on how much sauce u like). Remember that I soak and wash the mushroom at the beginning? The water will turn a bit brown from the mushroom and I just sieve and pour in the water to the mince meat.
-Cover and simmer till cook.

Poach the egg, blanch the mee and vege. Sprinkle some spring onion (optional). Put all of them together. When eating just mix all together!

Papa's Mi fen soup

This is my father's unique Mi fen/bee hoon soup. This dish is a Chinese dish and it is not sold at shops. It is so unique that i call it Papa's mi fen soup. The main reason that it is unique is because any kind of meat/seafood can be use to cook it. Another reason is that its really easy and fast to prepare. The key is to put as many combo of meat/seafood as u can.

Ingredient (Qty depend on u)
The combo of any meat and seafood is up to u (seasoning them 1st are optional):
Any meat - Pork/beef/chicken
Any seafood - prawn/squid/fish
Bee hoon (wash and soak for few minute)
Any suitable vege - Tau geh (Bean sprouts)/Sawi
Egg, 1 cube maggi seasoning (optional)

Prepare
-Boil water in kuali/pot and + 1 cube maggi seasoning .
-Meat (1st). Stir.
-Seafood (2nd). Stir
-Next put bee hoon and vege if everyone is going to eat it immediately or else cook them seperately
-Add in egg
-Scoop out and ready to eat~~ :)

Recipe: Yong ta fu

Ingredient for fish paste and yong ta fu (6 person):
Fish paste: Half ikan tenggiri [Kou (high) fish in chinese], 1 bowl sengkuang, 1 spoon corn flour, salt ajinamoto water (salt + aninamoto + water on small plate), some minch pork

Yong ta fu: 2 packet tofu (24 pcs), 8 ladies finger, 2 brinjal, fu cuk skin (the amount varies depend on how many ppl.)

Ingredient for soup:
A handfull of ikan bilis
leftover bone from ikan tenggiri
Some sengkuang and tong chai

Ingredient for mee:
bee hoon (qty depend on how many ppl)
vege

Prepare the soup
- Heat a pot of water.
- Add ikan bilis and the fish bones after removing flesh

Prepare fish paste
In short, scoop and chop the fish. Mix together salt water, corn flour, sengkuang and minch meat. Look on for detail info. The key is to add water and throw it up and down so that its soft.

Ikan tenggiri. Wash the fish. Cut the top part of fish in slicing motion. Once the top part cut, take a spoon and scoop/scrap up flesh. Be careful to take out bone. Do the same to bottom. The bone, skin and head can use to for the soup.

Next chop the fish further, take a spoon and add some salt water into fish. Purpose so that the salt will be more evenly spread and also the water use so that fish is soft.

Add a spoon of corn flour. Mix it evenly.

Throw the fish in up and down motion so that fish is soft.

Add minch meat and sengkuang. Mix together. Add some water in the fish is not soft enough. Purpose to add minch meat is to increase the quantity.

Prepare and fry yong ta fu

After that stuff the mixture into ladies finger, tafu, fucuk skin, brinjol (cut them before filling them up). Fry everything except ladies finger. Put the ladies finger into pot of soup. Take it out after cook.

Ready to eat~!!

Recipe: Kueh Teow Soup (Boil)

Ingredient for 4 person
- Half a chicken
- aji + salt
- 1 kg kueh tow
- small tau geh (bean sprout)
-sawi

Prepare Soup
- 3 1/2 bowl of water
- min half a chicken (chop into tiny pcs and wash)
-Boil using medium fire
-when water is boil put fishball, salt and ajinmoto - try and taste

Prepare kueh tow
- Blanch (the action of puting the kueh tow into boiling water in kuali) kueh tow for a while only. take it out
-Blanch tau geh, sawi

Recipe: Mian Fen kao (Boil)

Serving for 2
Ingredient
-Tepung gandum (wheat flour). 300gm are use. 150gm for each person.
-Ikan bilis
-Minch meat
-Cekor manis: a kind of vege. remember to wash it.

Prepare dough

-Put 300gm of tepung gandum onto plate
-1ts salt
-1 cup of water
-Mix and knead the dough
-Leave it for 30 min to let it rise a little

Boil ikan bilis stock

-Peel ikan bilis (abt 1 handful)
-Put the ikan bilis into pot and add water
-Boil for half - 1 hr
-Purpose is to boil a ikan bilis stock

After half hour (dough)
-Take a portion of dough, roll into cylinder, pinch into balls, flatten and stretch it.

-When water boil put the stretch dough into kuali and take it out 5 min later

When ready to eat (usually cook individually)

-Take out ikan bilis stock from big pot into small pot
-Add minch meat (cook for 5-10min)
-Add cekor manis
-Egg
-Pour soup mixture into bowl of mian fen kao. Ready to eat~!!

Recipe: spaghetti

learning to make spaghetti from a fren haha:

1) clean your pot and put enough water to soak the spagetti
2) add 2 spoonful cooking oil (this is to avoid the spagetti sticking each other)
3) add some salt (according to your taste)
4) add spagetti when the water is boil
5) let them boil for about 5-8 mins .. until it soften (you may take a few strip and try the texture)
6) slice onion into ring shape or cut into blocks and fry them (this is optional , because i like onions) , you may add garlic to make the taste better
7) add the tomato sauce into the pan together with the onions or garlic.. stir it
8) add any meat or tuna.. according to you liking
